BRAISED RED CABBAGE

- 1700g Red cabbage
- 150g Olive oil
- 150g Red onion
- 350g Apple
- 10g Cinnamon sticks
- 100g Sugar
- 160g Red wine vinegar
- 1ltr Red wine
- 100g Raisin
Instructions
- Peel the cabbage, onion and apples
- Slice the cabbage apples and onion as finely as you can
- Pour the oil in a thick bottom pan
- Heat the oil till nearly smoking hot
- Add to the pan the sliced cabbage, onion and apple
- Fry for a few minutes turning occasionally
- The cabbage will not color but as it cooks it will turn a lighter red
- Once all the cabbage has changed color add to the pan the cinnamon and sugar Cook for 3 minutes
- Add the red wine vinegar to the pan and cook till all the liquid has evaporated
- Add to the pan the red wine and raisins
- Bring to the boil
- Turn down to a simmer and cover with foil
- Cook for roughly 45 minutes or until the cabbage is tender and the liquid has evaporated
- Remove from the heat and leave to cool
- Sore in the fridge till needed
