YUCCA FRITTERS

Ingredients
- 5 sticks Yucca
- 1 red bell pepper
- 1 red onion
- 1 scotch bonnet
- 1/2 cup flour
- Baking powder
- Complete seasoning
- salt
- pepper
Instructions
- Peel the Yucca and wash well
- Dry the Yucca
- Grate the yucca into a bowl
- Wash/De-seed and peel the onion, bell pepper and scotch bonnet
- Finely chop the onion, red bell pepper and scotch bonnet
- Add the prepared vegetables to the yucca, along with the flour and baking powder
- Season with the complete seasoning
- Season with the salt and pepper
- Mix well to combine
- Check the seasoning and texture
- Add more flour if required
- Reserve in the fridge till needed
