WEDGE SALAD

Ingredients
- Iceburg lettuce
- Cherry tomatoes
- Avocado
- Bacon
- Blue cheese crumbles
- Mayonnaise
- Greek yoghurt
- White vinegar
- Blue cheese
- Salt
- Pepper
Instructions
- Wash the lettuce and remove the outer leaves
- Spin dry and cut into 8 even wedges
- Reserve the wedges in the fridge under a damp paper towel
- Place the yoghurt, Mayonnaise, vinegar & blue cheese in a blender
- Pulse till a chunky consistency is acheived. Season to taste with salt and pepper
- Reserve in the fridge till needed
- Wash the cherry tomatoes and cut into halves. Reserve
- Peel the avocado and remove the pitt. Reserve
- Roughly chop the bacon and reserve
To serve
- Place two wedges of iceburg in the dish so they are overlapping
- Add to the dish the cherry tomatoes, bacon, roughly chopped avocado and the blue cheese crumbles.
- Generously drizzle the blue cheese dressing over the top and serve immediately
