VANILLA SPONGE
Prep/Cooking Time: 15-30 Minutes

- 300g AP flour
- 260g sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 120g butter
- 2 tsp vanilla extract
- 240g milk
- 2 large eggs
- 60g oil
Instructions
- Pre-heat the oven to 350f
- Sieve together the flour, baking powder and salt
- Place the room temperature butter in a mixing bowl with the sugar
- Whisk till well combined and pale in colour
- Add the eggs and vanilla extract to the bowl and whisk till incorporated
- Once incorporated combine the whisked eggs, milk, oil and flour
- Fold together till well incorporated
- Transfer to a lined cake tin and place in a pre-heated oven for 40 minutes
- Check with a skewer to see if the centre is cooked.
- If not cooked, cook for a further 5-15 minutes
- Once cooked leave to cool
