VANILLA SPONGE

Ingredients

  • 300g AP flour
  • 260g sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 120g butter
  • 2 tsp vanilla extract
  • 240g milk
  • 2 large eggs
  • 60g oil

Instructions

  • Pre-heat the oven to 350f
  • Sieve together the flour, baking powder and salt
  • Place the room temperature butter in a mixing bowl with the sugar
  • Whisk till well combined and pale in colour
  • Add the eggs and vanilla extract to the bowl and whisk till incorporated
  • Once incorporated combine the whisked eggs, milk, oil and flour
  • Fold together till well incorporated
  • Transfer to a lined cake tin and place in a pre-heated oven for 40 minutes
  • Check with a skewer to see if the centre is cooked.
  • If not cooked, cook for a further 5-15 minutes
  • Once cooked leave to cool
