TOMATO SALSA

 Ingredients

  • 500g Ripe vine tomatoes
  • 1 Red bell pepper
  • 1 Red onion
  • 2 Chili pepper
  • 1 Bunch cilantro/coriander
  • 2 Lemons
  • Olive oil
  • Salt 
  • Black pepper

Instructions

  • Wash the tomatoes and remove the stem and core
  • Wash the bell pepper and chili pepper and remove the stems and seeds
  • With a sharp knife cut the tomatoes and bell pepper into small dice
  • Place the diced ingredients into a mixing bowl
  • Dice the chili pepper as finely as you can and add to the bowl
  • Wash the cilantro and remove any bad leaves or root
  • Roughly chop the cilantro keeping the stems in as they add texture
  • Mix all of the ingredients together and add a couple spoons of olive oil
  • Cut the lemons in half and squeeze adding all of the juice to the bowl
  • Season to taste with the salt and pepper

If you like spicy add more chili pepper and if you don't like citrus put less lemon juice
