TOMATO SALSA

- 500g Ripe vine tomatoes
- 1 Red bell pepper
- 1 Red onion
- 2 Chili pepper
- 1 Bunch cilantro/coriander
- 2 Lemons
- Olive oil
- Salt
- Black pepper
Instructions
- Wash the tomatoes and remove the stem and core
- Wash the bell pepper and chili pepper and remove the stems and seeds
- With a sharp knife cut the tomatoes and bell pepper into small dice
- Place the diced ingredients into a mixing bowl
- Dice the chili pepper as finely as you can and add to the bowl
- Wash the cilantro and remove any bad leaves or root
- Roughly chop the cilantro keeping the stems in as they add texture
- Mix all of the ingredients together and add a couple spoons of olive oil
- Cut the lemons in half and squeeze adding all of the juice to the bowl
- Season to taste with the salt and pepper
If you like spicy add more chili pepper and if you don't like citrus put less lemon juice
