TOMATO MOZZARELLA SKEWER

Ingredients

  • 45pcs Cherry tomato
  • 45pcs Mozzarella (mini)
  • 10 Leaves Basil
  • Olive oil
  • Salt
  • Pepper
  • Bamboo skewers

Instructions

  • Was the cherry tomatoes and leave to dry on paper
  • Drain the mozzarella from the liquid and leave to dry for a minute on paper
  • Once dry cut the cherry tomatoes in half through the core
  • Also cut the mozzarella into halfs
  • Wash the basil leaves and pat dry
  • Pick the leaves into pieces of similar size to the tomatoes and mozzarella
  • Take the skewer and add the pieces alternaing between the tomato, mozzarella and basil
  • Do this till there are 3 pieces of each ingredient on the skewer
  • reserve in the fridge till needed

To serve

  • Place the skewers on a serving platter and drizzle with the olive oil
  • Season generously with the salt and pepper
