SALMON RILLETTES
Prep/Cooking Time: 15-30 Minutes

- 500g Salmon fillet
- 150g Creme fraiche
- 30g Capers
- 2 Lemons juiced
- 1/2 Bunch Tarragon
- Salt
- Pepper
Instructions
- Place the salmon skin side down on a baking sheet
- Season the flesh and rub with olive oil
- Cook in the oven at 180c for 8 minutes or until the salmon is cooked through
- Once cooked remove from the oven and leave to go cold
- Once cold remove the cooked salmon from the skin and place in a bowl
- Break the salmon with a fork till no large pieces remain
- Add to the bowl the lemon juice and creme fraiche
- Mix well
- Chop the capers and the tarragon and add to the bowl
- Again mix well and season to taste
- Serve on crisp crostinis with a caper as garnish
