SALMON RILLETTES

Prep/Cooking Time: 15-30 Minutes

Ingredients

  • 500g Salmon fillet
  • 150g Creme fraiche 
  • 30g Capers
  • 2 Lemons juiced
  • 1/2 Bunch Tarragon
  • Salt
  • Pepper

Instructions

  • Place the salmon skin side down on a baking sheet
  • Season the flesh and rub with olive oil
  • Cook in the oven at 180c for 8 minutes or until the salmon is cooked through
  • Once cooked remove from the oven and leave to go cold
  • Once cold remove the cooked salmon from the skin and place in a bowl
  • Break the salmon with a fork till no large pieces remain
  • Add to the bowl the lemon juice and creme fraiche
  • Mix well
  • Chop the capers and the tarragon and add to the bowl
  • Again mix well and season to taste
  • Serve on crisp crostinis with a caper as garnish
