ROASTED SWEET POTATO MASH
Prep/Cooking Time:
Ingredients
- 2kilo Sweet potatoes
- 100g Olive oil
- 100g Maple syrup
- 250g Red onion
- 1g Black pepper
- 20g Salt
- Last stage
- 30g Red wine vinegar
- 10g Salt
- 1g Pepper
Instructions
- Peel the sweet potatoes and remove any roots or pits
- Cut the sweet potatoes into wedges and place in a bowl
- Peel the onion and roughly slice
- Add the onions to the sweet potato
- Now add the olive oil, maple syrup, salt and pepper to the bowl
- Toss together so that the seasoning and oil are evenly dispersed
- Place the sweet potato mix onto a baking sheet
- Cook at 400f for 25 minutes or until the potatoes are cooked through and golden around the edges
- (the onions will be slightly darker as the slices are much smaller)
- Transfer the potatoes and onions to a bowl
- Crush the potatoes with a spoon or fork and stir till a rough mash consistency is achieved
- Now add to the bowl the vinegar, salt and pepper
- Stir well
- Check the seasoning and leave to cool
- Reserve in the fridge till needed
