PICKLED KING OYSTER MUSHROOMS

Ingredients

  • 1 kilo King oyster mushrooms
  • 7g Rosemary
  • 4g Thyme
  • 2 cloves Garlic
  • 200g White onion
  • 700ml White wine vinegar
  • 200g Sugar
  • 10g Salt
  • Parsley

Instructions

  • Clean the mushrooms, onion and garlic
  • Cut the mushrooms into bite size pieces and finely slice the onion and garlic
  • Place the cut ingredients into a bowl and add to it the herbs
  • Place the sugar and vinegar in a thick bottomed pan and place over a high gas
  • Once the vinegar boils and the sugar has dissolved pour the mix onto the mushrooms
  • Cover the bowl immediately and leave to cool at room temperature
  • Once cold place in air tight containers and reserve in the fridge till needed
  • To serve place in a serving bowl and sprinkle with chopped parsley
