PICKLED KING OYSTER MUSHROOMS

- 1 kilo King oyster mushrooms
- 7g Rosemary
- 4g Thyme
- 2 cloves Garlic
- 200g White onion
- 700ml White wine vinegar
- 200g Sugar
- 10g Salt
- Parsley
Instructions
- Clean the mushrooms, onion and garlic
- Cut the mushrooms into bite size pieces and finely slice the onion and garlic
- Place the cut ingredients into a bowl and add to it the herbs
- Place the sugar and vinegar in a thick bottomed pan and place over a high gas
- Once the vinegar boils and the sugar has dissolved pour the mix onto the mushrooms
- Cover the bowl immediately and leave to cool at room temperature
- Once cold place in air tight containers and reserve in the fridge till needed
- To serve place in a serving bowl and sprinkle with chopped parsley
