PAN FRIED SALMON WITH CHILI DRESSING

Ingredients

  • 200g salmon fillet
  • 160g choi sum
  • 20g red chili
  • 80g cooked brown rice
  • 10g olive oil
  • 30g chili dressing

Instructions

  • On the stove heat 1 fry pan and 1 pasta pan both with a little olive oil
  • When hot add to the fry pan the salmon seasoned with salt and pepper, skin side down
  • To the other pan add the sliced red chili and the washed choi sum
  • Place the salmon in the oven to cook through (turning after 4 minutes)
  • Once the choi sum is cooked add to the pan the brown rice and warm through
  • Season to taste and spoon onto the plate 
  • Place the cooked salmon on top 
  • Serve the dressing in a ramakin on the side
