MUSHROOM SAUCE
Prep/Cooking Time: 30-45 Minutes

- 60g white onion
- 30g butter
- 220g button mushrooms
- Sprig of thyme
- Sprig of rosemary
- 60g white wine
- 120g cream
- 2g salt
- 1g pepper
- 10g WW vinegar
Instructions
- Slice the onion and place in a thick bottom pan with the butter
- Saute till they begin to colour then add the herbs
- Add to the pan the finely sliced mushrooms and cook till they begin to color
- Stir then add to the pan the white wine and the WW vinegar
- Reduce the liquid by half then add to the pan the cream
- Bring to the boil
- Reduce by half
- Season to taste then remove from the heat
- Leave to cool and reserve in the fridge till needed
