MARINATED OLIVES
Prep/Cooking Time: 0-15 Minutes

- 1 kilo Pitted green queen olives
- 2 oranges
- 1 lemon
- 2 sprigs thyme
- 2 stems rosemary
- 8 cloves garlic
- 120g Olive oil
- 1 tbs chili flakes
Instructions
- Drain the Olives from the brine
- Place the olives in a bowl and add the olive oil
- Strip the rosemary and thyme from the stems and add to the olives
- Peel the garlic and finely slice, add to the olives
- Remove the peel from the oranges and lemon and roughly chop, add to the olives
- Juice the oranges and lemon and add the juice to the olives
- Add the chili flakes and mix through
- Store at room temperatues for 2 days then refrigerate till needed
