MARINATED OLIVES

Ingredients

  • 1 kilo Pitted green queen olives 
  • 2 oranges
  • 1 lemon
  • 2 sprigs thyme
  • 2 stems rosemary
  • 8 cloves garlic
  • 120g Olive oil
  • 1 tbs chili flakes

Instructions

  • Drain the Olives from the brine
  • Place the olives in a bowl and add the olive oil
  • Strip the rosemary and thyme from the stems and add to the olives
  • Peel the garlic and finely slice, add to the olives
  • Remove the peel from the oranges and lemon and roughly chop, add to the olives
  • Juice the oranges and lemon and add the juice to the olives
  • Add the chili flakes and mix through

  • Store at room temperatues for 2 days then refrigerate till needed
