MARINATED LEEKS

Ingredients
- 500g medium size leeks
- 100ml White wine
- 10ml White wine vinegar
- 50ml Olive oil
- Salt
- Black pepper
Instructions
- Remove the root tips and green leaves from the ends of the leeks
- Pull back the leaves and wash under running cold water, being careful not to break the leek apart
- Once cleaned dry off the leek as much as possible and place in a baking pan
- Add to the pan the wine, vinegar and olive oil
- Generously season the leeks and cover with foil
- Cook in a preheated oven at 220c for 20-30 minutes or until cooked
- When the leeks are tender to the touch remove from the oven and leave to cool naturaly
- Once cool place in a smaller container so that the liquid covers them and leave till needed
Tip
If there are any herbs that you particulary like they can be added before cooking to infuse the flavors through, hard herbs would work best.
