MAHI MAHI, CHERRY TOMATOES, GARLIC AND CAPERS

Ingredients
- 200g Mahi
- 2 tbs olive oil
- 2 tbs olive oil
- 4 cloves garlic
- 1 pint cherry tomatoes
- 2 tbsp capers
- 1 tsp salt
- 3 tbsp tomato pulp
Instructions
- Peel and slice Garlic
- Fry garlic in olive oil till golden
- Add chopped cherry tomatoes and cook for 1 minute
- Add capers and cook for a further 2 minutes
- Add tomato pulp and seasoning
- Simmer for 5 minutes
- Remove from the heat and reserve till needed
- Heat a non stick pan till smoking hot
- Add the olive oil
- Season the Mahi with salt and place in the pan
- Cook for 2 minutes on either side
- Remove from the pan and arrange on the dish
- Bring the sauce to the simmer and spoon over the fish
