MAHI MAHI, CHERRY TOMATOES, GARLIC AND CAPERS

Ingredients
  • 200g Mahi
  • 2 tbs olive oil
  • 2 tbs olive oil
  • 4 cloves garlic
  • 1 pint cherry tomatoes
  • 2 tbsp capers
  • 1 tsp salt
  • 3 tbsp tomato pulp
Instructions
  • Peel and slice Garlic
  • Fry garlic in olive oil till golden
  • Add chopped cherry tomatoes and cook for 1 minute
  • Add capers and cook for a further 2 minutes
  • Add tomato pulp and seasoning
  • Simmer for 5 minutes
  • Remove from the heat and reserve till needed

  • Heat a non stick pan till smoking hot
  • Add the olive oil
  • Season the Mahi with salt and place in the pan
  • Cook for 2 minutes on either side
  • Remove from the pan and arrange on the dish
  • Bring the sauce to the simmer and spoon over the fish
