GREEN PAPAYA SALAD

- 60g carrot
- 60g chinese radish
- 60g green papaya
- 60g cucumber
- 20g red chili
- 5g cilantro
- 1g chili flakes
- 20g sugar
- 40g white wine vinegar
- 60g mango
- salt
- pepper
Instructions
- Place the chili flakes, sugar and vinegar in a small bowl
- Leave till the sugar is disolved
- Peel the carrot, radish, green papaya, cucumber & mango
- Shred all the vegetables into pieces of a similar size and place in a mixing bowl
- De-seed the chili and finely slice
- Wash the cilantro and pat dry, pick into plushes
- Add the sliced chili and cilantro to the bowl
- Add the dressing and the olive oil
- Toss well and season to taste
- Serve immediately
