GREEN PAPAYA SALAD

Ingredients

  • 60g carrot
  • 60g chinese radish
  • 60g green papaya
  • 60g cucumber
  • 20g red chili
  • 5g cilantro
  • 1g chili flakes
  • 20g sugar
  • 40g white wine vinegar
  • 60g mango
  • salt
  • pepper

Instructions

  • Place the chili flakes, sugar and vinegar in a small bowl
  • Leave till the sugar is disolved
  • Peel the carrot, radish, green papaya, cucumber & mango
  • Shred all the vegetables into pieces of a similar size and place in a mixing bowl
  • De-seed the chili and finely slice
  • Wash the cilantro and pat dry, pick into plushes
  • Add the sliced chili and cilantro to the bowl
  • Add the dressing and the olive oil
  • Toss well and season to taste
  • Serve immediately
