GREEN KALE SALAD
Prep/Cooking Time: 15-30 Minutes

- 80g Green Kale
- 65g Local mango
- 30g Bread
- 20g Green onions
- 15g Ricotta salata
- 1/2 Lemon
- Olive oil
Instructions
- Clean the Kale and wash to remove any dirt
- Remove any stems but try to keep the leaves as large as possible
- Keep in the fridge till needed
- Peel the mango and remove the stone
- Cut into thin slices and reserve in the fridge till needed
- Cut the green onion into thin slices and keep in the fridge
- Cut the bread into pieces and drizzle with olive oil
- Bake the bread in the oven till dried through and crispy
- Once the bread is ready remove from the heat and leave to cool
- Once the bread is cold crush into rough pieces and keep in an air tight container at room temperature till needed
- To serve place the kale in a mixing bowl and crush with your hands
- Add to the bowl the green onion, mango and croutons
- Drizzle with the lemon juice and olive oil
- Season to taste and spoon into a serving dish
- To finish grate the ricotta salata over the top and serve
