GILMORE'S CHILI

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 3 kilo beef mince
  • 800g onion
  • 30g garlic
  • 400g red bell pepper
  • 800g potato
  • 12g chili powder
  • 800g paprika
  • 40g garlic powder
  • tomato paste
  • chopped canned tomatoes
  • salt
  • pepper

Instructions

  • Place the oil in a thick bottom pan and heat over a high heat
  • Once oil is hot add top the pan the beef
  • Cook till begining to colour 
  • Stir and colour again
  • Do this 3-4 times
  • Add to the pan the onion and garlic finely chopped
  • Cook till the onion softens
  • Add to the pan the spices and cook for 2 minutes
  • Add to the pan the tomato paste and stir through
  • Add to the pan the chopped canned tomatoes
  • Add to the pan the Potatoes (peeled and diced) and the bell peppers washed de-seeded and roughly chopped
  • Bring to the boil and stir well
  • Once boiled simmer for 3-4 hours stirring regularly to stop it from catching
  • Once beef is tender remove from the heat
  • Season to taste, add more paprika if necessary
  • Remove from the heat and cool in the chiller
  • Reserve in the fridge till needed
