CRANBERRY SAUCE
Prep/Cooking Time: 15-30 Minutes

- 1 Kilo Cranberries
- 500g Sugar
- 3.5g Cinnamon
- 3.5g Ginger
- 1 Orange
- 230g Red wine vinegar
- Salt
- Pepper
Instructions
- Place the cranberries, sugar, spices and vinegar into a thick bottom pan
- Cut the orange into wedges and remove any seeds
- Add the orange pieces to the pan
- Place the pan over a medium gas and heat until it boils
- Turn the gas down to low so the cranberries will simmer
- Cook until all the excess liquid has evaporated and the result is a thick consistency
- Remove from the heat and leave to cool
- Reserve in an air tight container till needed
