CRANBERRY SAUCE

Ingredients

  • 1 Kilo Cranberries
  • 500g Sugar
  • 3.5g Cinnamon
  • 3.5g Ginger
  • 1 Orange
  • 230g Red wine vinegar
  • Salt
  • Pepper

Instructions

  • Place the cranberries, sugar, spices and vinegar into a thick bottom pan
  • Cut the orange into wedges and remove any seeds
  • Add the orange pieces to the pan
  • Place the pan over a medium gas and heat until it boils
  • Turn the gas down to low so the cranberries will simmer
  • Cook until all the excess liquid has evaporated and the result is a thick consistency
  • Remove from the heat and leave to cool
  • Reserve in an air tight container till needed
