COUS COUS & BEET SALAD

- 150g cooked cous cous
- 100g cooked beets
- 80g cucumber
- 80g cherry tomatoes
- 20g coriander
- 10g balsamic vinegar
- 10g dijon mustard
- 20g olive oil
- salt
- pepper
Instructions
- Place the cooked cous cous in a mixing bowl
- Dice the cooked beetroot and the cucumber
- Slice the cherry tomatoes and add all to the bowl
- Pick the coriander leaves and add tose too to the bowl
- In a separate small bowl combine the balsamic, mustard and the olive oil
- Once the dressing is mixed combine all the ingredients together
- Season with the salt and pepper
- Serve
