COUS COUS & BEET SALAD

Ingredients

  • 150g cooked cous cous
  • 100g cooked beets
  • 80g cucumber
  • 80g cherry tomatoes
  • 20g coriander
  • 10g balsamic vinegar
  • 10g dijon mustard
  • 20g olive oil
  • salt
  • pepper

Instructions

  • Place the cooked cous cous in a mixing bowl
  • Dice the cooked beetroot and the cucumber
  • Slice the cherry tomatoes and add all to the bowl
  • Pick the coriander leaves and add tose too to the bowl
  • In a separate small bowl combine the balsamic, mustard and the olive oil
  • Once the dressing is mixed combine all the ingredients together
  • Season with the salt and pepper
  • Serve
