CHICKEN MANGO SALAD SANDWICH

Prep/Cooking Time: 15-30 Minutes

Ingredients

  • 800g Cooked chicken breast
  • 300g Mango
  • 500g Mayonnaise
  • Salt
  • Pepper
  • (Makes roughly 12 sandwich or 24 1/2's)

Instructions

  • Take the cooked chicken breasts and remove any fat
  • Finely slice the chicken before chopping into small pieces
  • Place the chopped chicken in a mixing bowl along with the mayonnaise
  • Peel the mango and remove the flesh from the stone
  • Chop the mango to a similar size to the chicken
  • Add the mango to the bowl and mix well
  • Season with the salt and pepper to taste

Packaging

  • Place a slice of bread on the table and spoon on around 140g of the mix
  • Spread the mix to the edges of the bread before placing a second slice on top
  • Cut the sandwich from corner to corner
  • Place in the sleeves and reserve in the fridge till needed
