CHICKEN CAESAR
Prep/Cooking Time: 30-45 Minutes

- Chicken breast
- Salt
- Pepper
- Olive oil
- Romaine lettuce
- Bread
- Parmesan
- Mayonnaise
- White wine vinegar
- Lemon juice
- White anchovies
- Tabasco
Instructions
- Place the Mayonnaise, olive oil and white wine vinegar in a mixing bowl
- Add to the bowl the lemon juice, parmesan cheese grated and the the liquid from the anchovies
- Whisk till all ingredients are combined and the dressing is smooth
- Reserve the dressing in a bottle and keep in the fridge till needed
- Take the bread and cut into cm dice
- Place on a baking tray and drizzle with olive oil
- Season the bread and place in a low oven at around 140c
- Cook in the oven till the bread is dry through and crispy
- Remove from the heat and leave to cool naturally
- Take the romaine lettuce leaves and wash under cold water
- Spin or place on paper to dry
- Once all the components are ready reserve till needed
- To serve season the chicken breast with salt and pepper and coat with olive oil
- Begin to cook the chicken breast in a pan or on the griddle
- Transfer to the oven to cook through
- Once cooked remove from the oven and leave to stand till the salad is ready
- Place the romaine salad leaves in a bowl and add the croutons
- Add the dressing and mix through
- Season to taste but remember the anchovies pieces will add a little extra saltiness
- Place the salad in a dish to serve
- Add to the salad some shaved parmesan and a few pieces of anchovies
- Slice the chicken breast and serve atop the salad
