CHAOURCE & APPLE SALAD

Ingredients

  • 50g Chaource cheese
  • 20g Roasted almonds
  • 40g Apple
  • 30g Croutons
  • 60g Rocket
  • 5g Grain mustard
  • 10g White wine vinegar
  • 5g Honey
  • 15g Olive oil
  • Salt
  • Pepper

Instructions

  • Place the mustard, honey and vinegar in a small mixing bowl and whisk together
  • Once well combined begin to slowly add the olive oil whilst constantly whisking
  • Once all the oil has emulsified reserve the dressing in the fridge till needed
  • Take a mixing bowl and place the washed rocket inside
  • Wash the apple and remove the core, cut the apple into thin slices
  • Crush the almonds and add them to the rocket along with the apple
  • Cut the cheese into pieces similar size to the crutons and add both to the bowl
  • Toss together then drizzle with the dressing
  • Toss again and add seasoning to taste
  • Spoon onto a bowl to serve
