CABBAGE AND TOMATO PICKLE

Ingredients
- 1 kilo Chinese cabbage
- 200g white onion
- 10g garlic
- 50g sugar
- 150g distilled vinegar
- 10g horseradish
- 1 kilo canned tomatoes
- 20g Salt
- 2g Pepper
Instructions
- Top and tail the cabbage and remove any outer leaves
- Roughly cut the cabbage into 1" squares
- Add the salt to the cabbage and leave to stand
- Whilst the cabbage is standing peel the onion and garlic
- Finely slice the onion and chop the garlic finely
- Drain off any excess water from the cabbage
- Add the onion and garlic to the cabbage
- Mix well then add the sugar and vinegar
- Add the canned tomatoes and cover
- Leave to stand overnight in the fridge
- Season to taste
