CABBAGE AND TOMATO PICKLE

Ingredients

  • 1 kilo Chinese cabbage
  • 200g white onion
  • 10g garlic
  • 50g sugar
  • 150g distilled vinegar
  • 10g horseradish
  • 1 kilo canned tomatoes
  • 20g Salt
  • 2g Pepper

Instructions

  • Top and tail the cabbage and remove any outer leaves
  • Roughly cut the cabbage into 1" squares
  • Add the salt to the cabbage and leave to stand
  • Whilst the cabbage is standing peel the onion and garlic
  • Finely slice the onion and chop the garlic finely
  • Drain off any excess water from the cabbage
  • Add the onion and garlic to the cabbage
  • Mix well then add the sugar and vinegar
  • Add the canned tomatoes and cover
  • Leave to stand overnight in the fridge
  • Season to taste
