BROWN RICE & PUMPKIN SALAD
Prep/Cooking Time: 30-45 Minutes

- 100g cooked brown rice
- 200g pumpkin
- 60g button mushrooms
- 40g green onions
- 10g red chili
- 20g olive oil
- 5g parsley
- 2g sesame seeds
- salt
- pepper
- 20g Szechuan dressing
Instructions
- Peel and dice the pumpkin
- Place in a bowl and toss with olive oil and seasoning
- Roast in the oven till tender and beginning to brown
- Remove from the oven and leave to cool
- Wash and slice the mushrooms
- Heat a fry pan and add a little oil
- Fry the mushrooms till tender
- Season and remove from the heat
- Finely slice the green onions and chili
- Toast the sesame seeds and chop the parsley
- Place the rice in a mixing bowl and add all the prepared ingredients
- Add the dresssing and toss through
- Season to taste
