BROWN RICE & PUMPKIN SALAD

Ingredients

  • 100g cooked brown rice
  • 200g pumpkin
  • 60g button mushrooms
  • 40g green onions
  • 10g red chili
  • 20g olive oil
  • 5g parsley
  • 2g sesame seeds
  • salt
  • pepper
  • 20g Szechuan dressing 

Instructions

  • Peel and dice the pumpkin
  • Place in a bowl and toss with olive oil and seasoning
  • Roast in the oven till tender and beginning to brown
  • Remove from the oven and leave to cool
  • Wash and slice the mushrooms
  • Heat a fry pan and add a little oil
  • Fry the mushrooms till tender
  • Season and remove from the heat
  • Finely slice the green onions and chili
  • Toast the sesame seeds and chop the parsley
  • Place the rice in a mixing bowl and add all the prepared ingredients
  • Add the dresssing and toss through
  • Season to taste
