BLACKENED ONIONS

- Red onions
- Olive oil
- Salt
- Pepper
- Peel the onions keeping the root intact
- Depending on the size of the onions cut them into either 6 or 8 pieces
- Once cut place in a bowl and toss together with the olive oil, salt and pepper
- Once coated and seasoned transfer to a baking sheet
- Cook in a pre-heated oven at 220c
- Cook for 12-14 minutes or until the edges begin to blacken
- Remove from the oven and leave to cool naturally
- Use immediately or reserve in the fridge till needed
