BASIC ONION GRAVY
Prep/Cooking Time: 60-90 Minutes

- 800g white onions
- 120g butter
- 400g red wine
- 60g chicken powder
- 500g water
- 26g cornflour
- salt
- pepper
Instructions
- Peel the onions and remove the stem
- Finely slice the onions
- Melt the butter in a thick bottomed pan
- Add to the pan the sliced onions
- Cook over a low heat till the onions are softened and beginning to colour
- (the colour of the gravy comes from the onions so make sure to cook them well)
- Once the onions are colouring pay close attantion as they can catch quickly
- Once the onions are well coloured add the chicken powder and wine to the pan
- Cook till the all the wine has reduced out
- Now add to the pan the water and simmer for 10 minutes
- Dilute the cornflour with a little cold water and add to the pan
- Stir till the gravy has thickened then simmer for 2 minutes
- Remove from the heat and season to taste
- Leave to cool then reserve in the fridge till needed
