BASIC ONION GRAVY

Prep/Cooking Time: 60-90 Minutes

Ingredients

  • 800g white onions
  • 120g butter
  • 400g red wine
  • 60g chicken powder
  • 500g water
  • 26g cornflour
  • salt
  • pepper

Instructions

  • Peel the onions and remove the stem
  • Finely slice the onions
  • Melt the butter in a thick bottomed pan
  • Add to the pan the sliced onions
  • Cook over a low heat till the onions are softened and beginning to colour
  • (the colour of the gravy comes from the onions so make sure to cook them well)
  • Once the onions are colouring pay close attantion as they can catch quickly
  • Once the onions are well coloured add the chicken powder and wine to the pan
  • Cook till the all the wine has reduced out
  • Now add to the pan the water and simmer for 10 minutes
  • Dilute the cornflour with a little cold water and add to the pan
  • Stir till the gravy has thickened then simmer for 2 minutes
  • Remove from the heat and season to taste
  • Leave to cool then reserve in the fridge till needed
