BAKED NEW YORK CHEESECAKE

Ingredients

  • 900g Cream cheese
  • 250g Sugar
  • 180g Eggs
  • 50g egg yolk
  • 280g Greek yogurt
  • 45g Flour
  • 3g Vanilla
  • 1 Lemon zest
  • 1 Lemon juice
  • 500g Digestive biscuit
  • 90g Butter
  • 70g Sugar

Instructions

  • Place the cream cheese, sugar (larger amount), vanilla, flour, lemon juice and zest in a machine mixing bowl
  • Turn on to a low speed to soften and combine the ingredients
  • Add to the bowl the yogurt and mix through
  • Whilst mixing crack the eggs into a mixing bowl and separate the yolk
  • Once all ingredients are well combined turn the machine to a medium speed
  • Add the eggs 1 by 1 till they are all incorporated
  • Add the egg yolk
  • Once all the egg is combined the mix should be firm and glossy.
  • Place the digestives in a blender and pulse till crumbs are achieved
  • Melt the butter and add to the crumbs along with the sugar
  • Spoon the crumbs into the bottom of a lined cake tin
  • Press down with the back of a spoon
  • Carefully spread the cheese mix in the pan till the surface is level
  • Place in a pre-heated oven at 180 Celsius for 45 minutes
  • Remove from the oven and leave to cool naturally
  • Once nearly cold move to the fridge to chill
