BAKED AMERICAN CHEESECAKE

Ingredients

  • 1.2 kilo Biscuit crumbs
  • 300g Butter
  • 120g Sugar
  • 4.5 kilo Cream cheese
  • 1.25 kilo Sugar
  • 300g Flour
  • 25ml Vanilla essence
  • 5 Lemons zested and juiced
  • 15 Eggs
  • 5 Egg yolks
  • 1.3 kilo yogurt

Instructions

  • Place the biscuit crumbs and sugar in a mixing bowl
  • Melt the butter and add to the bowl
  • Mix well till the butter and crumbs are evenly combined
  • Once well mixed spoon into rings and press down evenly 
  • Reserve in the fridge till needed
  • Take the cream cheese and place in a large mixer bowl
  • Add to the bowl the lemon zest and juice along with the vanilla essence and the sugar
  • Whisk on a medium speed till there are no lumps
  • Add to the bowl the sifted flour and mix through
  • Now add the yogurt
  • Crack the eggs and separate the yolks
  • Remove any unwanted shell and whisk to break up the eggs
  • Turn the mixer onto a medium speed and add the eggs slowly till they are all incorporated
  • Once the mix is smooth remove from the mixer
  • Now divide the mix evenly between the 4 rings that you added the base mix to
  • Level off the mix so the tops are nice and even
  • Place in a pre heated oven at 180c for 40 minutes
  • After 40 minutes check the cakes
  • When you move the tray the cake middle should still have a little movement
  • Remove from the oven and leave to cool naturally for 30 minutes
  • After 30 minutes place in the fridge to cool
  • Once cold through run a knife around the cake to release it from the ring
  • Serve immediately or keep chilled till needed
