JAX PEPPERONATA

- 1/2 red onion
- 4 red bell peppers
- 50g capers
- 100g white vinegar
- 40g sugar
- 5g salt
- 40g olive oil
Instructions
- Peel the red onions and slice finely
- Wash and de-seed the red bell peppers
- Once cleaned slice the red bell peppers into long strips
- Heat the olive oil in a thick bottomed pan
- Once hot add the sliced bell peppers and onions
- Saute for 2-3 minutes till starting to color
- Add to the pan the sugar and stir through
- Once the sugar has disolved add the vinegar and capers
- Cook till all of the liquid has evaporated
- Season with the salt
- Reserve on the side till needed. Refridgerate if not needed
