Ingredients

  • 1/2 red onion
  • 4 red bell peppers
  • 50g capers
  • 100g white vinegar
  • 40g sugar
  • 5g salt
  • 40g olive oil

Instructions

  • Peel the red onions and slice finely
  • Wash and de-seed the red bell peppers
  • Once cleaned slice the red bell peppers into long strips
  • Heat the olive oil in a thick bottomed pan
  • Once hot add the sliced bell peppers and onions
  • Saute for 2-3 minutes till starting to color
  • Add to the pan the sugar and stir through
  • Once the sugar has disolved add the vinegar and capers
  • Cook till all of the liquid has evaporated 
  • Season with the salt 
  • Reserve on the side till needed. Refridgerate if not needed
