JAX LOBSTER
Prep/Cooking Time:

Ingredients
- Lobster tail
- 100g cherry tomatoes
- 7 scallions
- 1 clove garlic
- 30ml white wine
- 40ml marinara sauce
- 10g butter
- 2g tarragon
- 20ml olive oil
- salt
- pepper
Instructions
- Brush the lobster tail with olive oil and season with salt and pepper
- Place on the chargrill and cook till marked, move to the oven to cook through
- Heat the oil in a pan and add the peeled sliced garlic
- Once starting to color add to the pan the scallions
- Cook till slightly colored then add the halved cherry tomatoes to the pan
- Saute for a minute then add to the pan the white wine
- Cook till the wine has evaporated then add the marinara sauce
- Simmer and add the butter and tarragon
- Season to taste and serve immediately
