JAX CARAMELIZED ONIONS
Prep/Cooking Time: 60-90 Minutes
Printable VersionIngredients
- 3 lbs yellow onions
- 40ml olive oil
- 200g sugar
- 400g white vinegar
- 500g red wine
- 20g salt
Instructions
- Peel and finely slice the onions
- Place the oil in a thick bottomed pan over a high heat
- Add the sliced onions to the pan and fry till starting to color
- Add to the pan the sugar and begin to caramelize
- Add to the pan the vinegar and red wine
- Bring to the boil and then turn down to a simmer
- Simmer over a low heat till all the liquid has evaporated
- Remove from the heat and add to the pan the salt, stir well
- Leave to cool then reserve till needed
