JAX CAPER CREAM SAUCE

Ingredients- 480g heavy cream
- 80g yellow onion
- 50g capers
- 350g white wine
- 40g white vinegar
- 10g salt
Instructions
- Peel the yellow onions and finely chop
- Place the chopped onions in a thich bottomed pan and add the wine and vinegar
- Bring to the boil over a high heat and once boiled reduce the temperature to a simmer
- Simmer till reduced by half
- Add to the pan the capers and heavy cream
- Bring to the boil and simmer for 5 minutes
- Season with the salt
- Remove from the heat and reserve till needed
- Refridgerate till needed
