JAX CAPER CREAM SAUCE

Ingredients

  • 480g heavy cream
  • 80g yellow onion
  • 50g capers
  • 350g white wine
  • 40g white vinegar
  • 10g salt

Instructions

  • Peel the yellow onions and finely chop
  • Place the chopped onions in a thich bottomed pan and add the wine and vinegar
  • Bring to the boil over a high heat and once boiled reduce the temperature to a simmer
  • Simmer till reduced by half
  • Add to the pan the capers and heavy cream
  • Bring to the boil and simmer for 5 minutes
  • Season with the salt
  • Remove from the heat and reserve till needed
  • Refridgerate till needed
